The best part was the foam

For the Maya and the Mexica, foam wasn’t decoration: it was the most prized part of the drink. A cup arrived crowned, or it wasn’t ready.

Foam, raised by falling

There was no whisk and no machine. The drink was poured from one vessel into another, from a height, again and again, until the foam stood on its own. Maya artists painted the pour on their vases more than twelve centuries ago.

And the famous whisk?

The carved wooden molinillo everyone pictures arrived with the Spanish: no text or image from before the conquest shows one. The original tool was simpler: two vessels, a steady hand, and air.

Even the soldier who watched Moctezuma dine wrote it down: the cacao came “with its foam”. Bernal Díaz del Castillo, 1519.

Five centuries later

Tools change; the point doesn’t. Real cacao, melted into frothed milk, wearing its foam: the oldest luxury in the cup.

Some crowns you can drink.
